The Executive Chef is responsible for all food production including the restaurant inclusive of developing menus, food purchase specifications, and recipes. This individual is also responsible for the supervision of all kitchen personnel including Chefs and hourly staff while maintaining the highest professional food quality and sanitation standards.
Essential Duties and Responsibilities
Menu planning to assist in all venues
Control of all ordering for food and non-food products essential to kitchen operations. Maintain FIFO and insure all items are properly stored
Track sales revenue for food and total sales; track velocity of menu items
Staff and train employees in techniques of cooking, preparation, plate presentation, portion and cost control, and housekeeping. Continually coach back-of-house staff in a fair and positive manner
Maintain housekeeping standards and create weekly cleaning duties to maintain cleanliness of all equipment and work areas
Successfully represent the culinary vision of Lineage Restaurant while creating a positive working environment
Minimum Requirements
Minimum of 5 years kitchen management experience in the capacity of Executive Chef.
Must be able to communicate clearly with managers, kitchen and dining room personnel, and guests.
Extensive food, liquor, wine, beer, and beverage knowledge.
Strong, yet fair, leadership with both motivational and creative people skills.
Must be computer-savvy and able to use Office Word and Excel.
Must possess a State of Hawaii TB Health Card / ServSafe Card
